I probably have to give up coffee...

*sniff* and I don't want to!

From a good article sent to me by my mother  Gluten Issues or Celiac? Don’t Drink Coffee!

"In a nutshell, fairly recent lab research has revealed that 10% of coffee is a protein that cross reacts with gluten antibodies.

This means that if you are gluten sensitive or celiac and are avoiding gluten containing grains or perhaps have even gone completely grain free, if you still drink coffee there is a strong likelihood that the protein in the coffee is triggering the very same gluten related health problems you are trying to avoid."

Lovely! At least I like tea, but it doesn't quite have the *kick* of coffee. Maybe I can keep a can around to sniff when I need a mood boost (yes I know I sound like a total addict with that statement!)

Another interesting point, especially about symptoms of gluten sensitivity, which I had no idea about!

Most people who are gluten sensitive don’t realize it because gastrointestinal problems like burping, gas, tummy upset, or toilet issues are the least common way for gluten issues to present themselves!

The most common symptoms of gluten sensitivity?

Migraines and other neurological issues – even MS!

Hormone and endocrine problems are another common way for gluten issues to manifest themselves.

Do you want some advice on coffee substitutes? I've tried a bunch of them (in trying to avoid caffiene).

Yes! I'd love some advice. Caffeine isn't the problem, its the coffee protein that's a cross-reactor. .

My experiences have all been with caffeine free coffee substitutes, so I don't have advice on what to look for if you want caffiene. Except perhaps mate, which I generally think is bitter (except for one recipe we learned from Teavana; I can look it up if you have one of those available).

The closest approximation to coffee taste I've found has been roasted barley. I'm not sure if that's a grain that's okay for you, and my favorite supplier is apparently no longer making it, so I'm hoarding what I have left.

Anything with dandelion root tastes like grass to me (and N generally finds them horrible, but I don't remember what he said it tasted like). We drink a lot of tea, and a lot of varieties of tea (you've seen our collection!) and this was unpalatable to both of us.

Teeccino is apparently pretty popular, but I've never tried it since it has "natural flavor" as an ingredient (and that can be a migraine trigger). I just looked it up and wow, they have a lot of flavors now. The main ingredient is carob, so if you like carob that may be an option.

I also make a lot of chai. I use rooibos as a base, but if you use tea, it'll have caffiene. I tend to buy supplies from Mountain Rose Herbs and just throw in whatever I feel like that day (some days it's ginger-spicy and some days it's pepper-spicy). That's kinda fun. I make it on the stovetop, so it's a bit of a mess, but I think the flavors mix better than brewing tea and dumping in sweetener and milk afterwards.

I found it helpful to ask myself what do I want out of the experience of drinking coffee? For me, a big part of it is the ritual of it - of waking up to drinking a huge mug of coffee. I realized that I didn't depend so much on the caffiene to wake up as the ritual of drinking it. Figuring out what you expect from coffee may help you determine if you want a substitute that tastes like coffee, or one that has a high level of caffiene, or what exactly.
